Ha seguito corsi di recitazione presso l'Actor's Studio di New York e a Roma con Cosimo Cinieri, Lucia Poli, Francesca de Sapio, Michael Margott, Jack Waltzer. Viene scoperta da Gianni Boncompagni che la lancia come ragazza pon pon aDomenica In. Finita quell'esperienza Sabrina porta a termine gli studi (maturità scientifica e corso parauniversitario sulle telecomunicazioni) e inizia a lavorare nella redazione di Rock 'n' Roll (1993), uno spin-off di Non è la RAI, programma al quale prende parte nel 1993 e nel 1994 curando l'angolo della posta, del dibattito con le ragazze del programma e interpretando alcuni sketch comici. All'interno del programma ha anche interpretato due pezzi come cantante e condotto il gioco di uno sponsor. Successivamente, è tornata in TV nel 1997 interpretando il ruolo di "Darla" in Macao, sempre con Boncompagni. Nel 1997 è anche protagonista della sitcom di Rai 2 Disokkupati, insieme a Paolo Ferrari, Pierfrancesco Loche, Adolfo Margiotta eStefano Masciarelli, per la regia di Franza Di Rosa. Negli anni duemila ha condotto su LA7 la trasmissione La valigia dei sogni, e nello stesso periodo, con il film ...e se domani, ha vinto il premio come migliore interpretazione femminile al Festival di Annecy. Sempre nei primi anni duemila ha partecipato a varie trasmissioni televisive interpretando personaggi irriverenti, tra cui una parodia di Lara Croft, protagonista del celebre videogioco Tomb Raider, in programmi come Ciro presenta Visitors. Interpreta inoltre ruoli in radiodrammi o radiosceneggiati. Nel 2001 ha vinto al Flaiano Film Festival come migliore attrice non protagonista per L'ultimo bacio. Nel 2008 ha recitato nel videoclip Drammaturgia del gruppo musicale rock italiano Le Vibrazioni, e ha inoltre ricevuto due candidature di fila ai David di Donatello come migliore attrice non protagonista: una nel 2007 per N (Io e Napoleone) e l'altra nel 2008 per Signorina Effe. Nel 2009 è protagonista nella miniserie televisiva Due mamme di troppo, su Canale 5. Nel 2010torna sul grande schermo con il film Baciami ancora di Gabriele Muccino, ed è scelta come conduttrice del Concerto del Primo Maggio (prima donna in assoluto nella storia della manifestazione) insieme al collega Rolando Ravello. Nel giugno2010 partecipa a La camera scura, una mostra di foto d'attori, organizzata da Amnesty International e presentata a Roma, per dire no alla pena di morte.
